Description

This Leftover Turkey Tetrazzini is a creamy pasta casserole made with tender turkey, mushrooms, and spaghetti baked in a cheesy sauce. A cozy, family-friendly meal that transforms holiday leftovers into a comforting and delicious dinner.

Ingredients

Scale
  • 12 oz spaghetti or linguine, cooked and drained

  • 3 tablespoons unsalted butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 3 tablespoons all-purpose flour

  • 2 cups chicken or turkey broth

  • 1 cup heavy cream (or half-and-half)

  • ½ cup milk

  • 3 cups cooked turkey, shredded or diced

  • 1 cup frozen peas

  • 1 teaspoon Italian seasoning

  • Salt and black pepper, to taste

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (optional, for topping)

Instructions

1. Cook Aromatics:
In a large skillet, melt butter over medium heat. Sauté onion, garlic, and mushrooms until softened, about 5 minutes.

2. Make the Sauce:
Sprinkle in flour and cook for 1 minute. Slowly whisk in broth, then cream and milk, until smooth and slightly thickened. Season with Italian seasoning, salt, and pepper.

3. Combine Ingredients:
Stir in turkey and peas. Add cooked pasta and toss to coat evenly.

4. Transfer to Baking Dish:
Pour mixture into a greased 9×13-inch baking dish. Sprinkle with mozzarella, Parmesan, and breadcrumbs if using.

5. Bake:
Bake at 375°F (190°C) for 25–30 minutes, until golden and bubbly.

6. Serve:
Let rest for 5 minutes before serving warm.
