Description
This Caramel Apple Pie is a cozy dessert filled with cinnamon-spiced apples and gooey caramel sauce baked inside a flaky pie crust. Perfect for fall, Thanksgiving, or any occasion where you want a comforting homemade pie.
Ingredients
For the Pie:

2 pie crusts (homemade or store-bought)

6 medium apples (Granny Smith, Honeycrisp, or mix), peeled, cored, and sliced

1 egg (beaten, for egg wash)

1 tablespoon coarse sugar (optional, for topping) 
Instructions
1. Make the Caramel Sauce:
In a saucepan over medium heat, melt sugar until golden brown. Stir in butter until combined. Slowly whisk in cream and a pinch of salt. Cool slightly.
2. Prepare the Apple Filling:
In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and half of the caramel sauce.
3. Assemble the Pie:
Place one pie crust in a 9-inch pie dish. Fill with apple mixture. Drizzle a little extra caramel on top. Cover with the second crust (or lattice design). Seal edges and cut slits for steam.
4. Bake:
Brush crust with egg wash and sprinkle with coarse sugar. Bake at 375°F (190°C) for 50–55 minutes, until crust is golden and filling is bubbly. Cover edges with foil if browning too quickly.
5. Cool and Serve:
Cool at least 2 hours before slicing. Drizzle extra caramel sauce over slices before serving.
Notes
Make Ahead: Prepare pie a day ahead and reheat before serving. Caramel sauce can be made 1 week in advance and refrigerated.
Variations: Add chopped pecans or walnuts for crunch, or use salted caramel for a sweet-salty balance.
