Description

Instructions

1. Sauté Aromatics:
In a large pot, melt butter over medium heat. Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 minute.

2. Make the Roux:
Whisk in flour and cook for 1–2 minutes to remove raw flour taste.

3. Add Liquids:
Slowly whisk in chicken broth, then milk and cream, stirring until smooth. Bring to a gentle simmer.

4. Cook the Veggies:
Add broccoli and shredded carrot. Simmer uncovered for 15 minutes, until broccoli is tender.

5. Blend (Optional):
For a smoother texture, use an immersion blender to partially blend the soup while leaving some chunks.

6. Add Cheese:
Stir in shredded cheddar cheese until melted and smooth. Season with salt, pepper, and nutmeg to taste.

7. Serve:
Ladle into bowls and serve warm with crusty bread or inside bread bowls.
