Description
This oven-roasted cauliflower is everything a great side dish should be—golden, crispy on the edges, tender inside, and bursting with deep, caramelized flavor. With simple pantry ingredients and a no-fuss roasting method, this recipe transforms humble cauliflower into a crave-worthy dish you’ll make again and again. Perfect as a side, on bowls, or straight off the pan!
Ingredients
1 large head cauliflower, cut into florets
3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp onion powder
½ tsp sea salt (or to taste)
¼ tsp black pepper
Optional: ½ tsp turmeric or curry powder for color and depth
Optional garnish: fresh parsley, lemon zest, or grated Parmesan
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the cauliflower florets with olive oil until fully coated.
Add garlic powder, smoked paprika, onion powder, salt, and pepper. Toss again to season evenly.
Spread the florets onto the baking sheet in a single layer—avoid overcrowding to ensure crisping.
Roast for 25–35 minutes, flipping halfway through, until the edges are deeply golden and caramelized.
Taste and adjust seasoning. Add optional garnishes like parsley, lemon zest, or Parmesan before serving.
Notes
For extra crispiness, use a very hot oven and don’t overcrowd the pan.
Add chili flakes or cayenne for a spicy kick.
Swap smoked paprika for curry powder, za’atar, or Italian seasoning for different flavor profiles.
Leftovers reheat well in an air fryer or hot skillet.
